"It's the most wonderful time of the year". I love Christmas. Every year my mind starts working overtime as i think about what cake I'm going to make. Normally, i'd go for a safe crowd-pleaser like a vanilla sponge or carrot cake and then i'd just go to town on the decorations. But this year, I really wanted to incorporate some traditional Christmas flavours.
When i think of how Christmas should taste, (yes, i do think of such things) I imagine things like cranberries, cinnamon, eggnog, peppermint, mulled wine and gingerbread. I do like gingerbread cookies but I'm not that crazy about them. I'm definitely more of a cake girl so i took all that ginger goodness of a gingerbread man and threw it into 3 layers of a super rich and moist cake, held together with a fluffy cream cheese frosting. To make it even more festive, it was packed with some of my favourite spices - cinnamon, cloves, allspice and nutmeg and of course a good dose of ground ginger.
Decoration wise, i dried some orange slices and threw on some pomegranates for a pop of colour. A couple of cinnamon sticks and a few stems of eucalyptus and i was good to go! My contribution to our Christmas feast!
